Tomato Sandwiches with Herb Mayo

Ingredients
- 4 ripe tomatoes, sliced thick
- 1/2 tsp salt
- 1/3 cup mayonnaise
- 1 tbsp chopped basil
- 1 tbsp chopped chives
- 1 tsp lemon juice
- 1/2 tsp black pepper
- 8 slices soft sandwich bread
- Butter lettuce, optional
Steps
- Lay the tomato slices on a plate and sprinkle lightly with salt.
- Stir the mayonnaise, basil, chives, lemon juice, and pepper in a small bowl.
- Spread the herb mayo on the bread.
- Layer the tomatoes, and lettuce if using, over 4 slices of bread.
- Close the sandwiches, press gently, and serve while the tomatoes are juicy.
Notes
Use the ripest tomatoes you can find and keep them at room temperature. Cold tomatoes lose much of their flavour.
Pairing Serve with sweet corn, chips, or a small cucumber salad.
