Carrot Ginger Soup

A bright winter soup of carrots, ginger, and a little orange, smooth without being heavy.

Ingredients

  • 2 tbsp butter or olive oil
  • 1 onion, chopped
  • 2 tbsp grated fresh ginger
  • 900 g carrots, peeled and sliced
  • 4 cups vegetable or chicken stock
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup orange juice
  • 1 tbsp lemon juice
  • 1/2 cup plain yogurt, for serving

Steps

  1. Warm the butter or oil in a soup pot over medium heat.
  2. Cook the onion for 5 minutes, until soft.
  3. Add the ginger and cook 1 minute, then add the carrots, stock, salt, and pepper.
  4. Simmer 20 to 25 minutes, until the carrots are very tender.
  5. Blend until smooth, then stir in the orange juice and lemon juice.
  6. Serve with a spoonful of yogurt if you like.

Notes

Fresh ginger gives the cleanest heat. Add the citrus after blending so the flavour stays bright.

Pairing Serve with toast, naan, or a grilled cheese sandwich.
