Honey Glazed Carrots

Sweet, glossy carrots with butter, honey, and lemon, simple enough for a weeknight and polished enough for a holiday table.

Ingredients

  • 900 g carrots, peeled and cut in batons
  • 2 tbsp butter
  • 2 tbsp honey
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp chopped parsley

Steps

  1. Put the carrots, butter, honey, water, salt, and pepper in a wide skillet.
  2. Bring to a simmer over medium heat, then cover and cook 8 minutes.
  3. Uncover and cook 6 to 10 minutes more, stirring often, until the water evaporates and the carrots are glazed.
  4. Stir in the lemon juice and parsley.
  5. Taste and add a pinch more salt if the carrots need it.

Notes

Use a wide pan so the liquid reduces quickly. If the glaze tightens before the carrots are tender, add a splash of water.

Pairing Serve with roast chicken, pork, or lentil loaf.
