Honey Glazed Carrots

Ingredients
- 900 g carrots, peeled and cut in batons
- 2 tbsp butter
- 2 tbsp honey
- 1/2 cup water
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lemon juice
- 2 tbsp chopped parsley
Steps
- Put the carrots, butter, honey, water, salt, and pepper in a wide skillet.
- Bring to a simmer over medium heat, then cover and cook 8 minutes.
- Uncover and cook 6 to 10 minutes more, stirring often, until the water evaporates and the carrots are glazed.
- Stir in the lemon juice and parsley.
- Taste and add a pinch more salt if the carrots need it.
Notes
Use a wide pan so the liquid reduces quickly. If the glaze tightens before the carrots are tender, add a splash of water.
Pairing Serve with roast chicken, pork, or lentil loaf.
