Plum Cake
A tender one-pan cake with halved plums sinking into the top and turning jammy around the edges.

Ingredients
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 8 plums, halved and pitted
- 1 tbsp granulated sugar
- 1/2 tsp cinnamon
Steps
- Heat the oven to 175 C (350 F) and butter a 9 inch round cake pan.
- Beat the butter and 3/4 cup sugar until light.
- Beat in the eggs one at a time, then beat in the vanilla.
- Stir in the flour, baking powder, and salt just until combined.
- Spread the batter in the pan and arrange the plums cut side up over the top.
- Sprinkle with 1 tbsp sugar and cinnamon. Bake 40 to 45 minutes, until the cake is golden and a skewer comes out clean.
Notes
Small prune plums work especially well, but any ripe firm plum will do. Let the cake cool before slicing so the fruit settles.
Pairing Serve with plain yogurt, whipped cream, or coffee.
