Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/3 cup maple syrup
  • 1 egg
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 1/2 cups rolled oats

Steps

  1. Heat the oven to 175 C (350 F) and line two baking sheets with parchment.
  2. Beat the butter and brown sugar until creamy.
  3. Beat in the maple syrup, egg, and vanilla.
  4. Stir in the flour, baking soda, salt, and cinnamon, then stir in the oats.
  5. Drop tablespoons of dough onto the sheets, leaving room to spread.
  6. Bake 10 to 12 minutes, until the edges are set and the centres still look soft. Cool on the sheet 5 minutes.

Notes

For thicker cookies, chill the dough 20 minutes before baking. Pull them while the centres are still soft for a chewy texture.

Pairing Serve with tea, coffee, or a cup of milk.
