Ingredients
- 1/2 cup butter, softened
- 1/2 cup packed brown sugar
- 1/3 cup maple syrup
- 1 egg
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 1/2 cups rolled oats
Steps
- Heat the oven to 175 C (350 F) and line two baking sheets with parchment.
- Beat the butter and brown sugar until creamy.
- Beat in the maple syrup, egg, and vanilla.
- Stir in the flour, baking soda, salt, and cinnamon, then stir in the oats.
- Drop tablespoons of dough onto the sheets, leaving room to spread.
- Bake 10 to 12 minutes, until the edges are set and the centres still look soft. Cool on the sheet 5 minutes.
Notes
For thicker cookies, chill the dough 20 minutes before baking. Pull them while the centres are still soft for a chewy texture.
